Nitrites in processed meats have long raised concerns over cancer. The World Health Organization says eating 50 grams of processed meat a day is linked to an 18 per cent higher risk of colorectal cancer — with nitrites potentially playing a role by forming cancer-causing compounds in the body.

And now, there may be another health concern. A major French study published this year found that people who consumed more food preservatives including nitrite are associated with a higher risk of developing Type 2 diabetes. It's findings like these that have seen the emergence of premium 'nitrite-free' alternatives on our shelves.
